Though officially the rules do sometimes allow that holidays and weekends do not count in terms of deadlines which means it is sometimes beneficial to plan an assignment to be submitted after a holiday period because the students get extra time to complete it.

Instead of panicking on missing your assignment, reach out to your professor as soon as possible. If you have a genuine reason for missing the assignment, be open and frank about it. If, instead, you have missed an assignment due to negligence, seek an extension from the professor.

Allow late submissions —Some instructors allow late submissions within a specific period of time after the due date. For example, if you want to allow students to submit a late assignment up to three days after the due date, set the Until Date as September 22 at 11:59 pm.
When to set available from date for assignments?
If you want to keep students from viewing and submitting an assignment until a specific date, set an Available From date. Assignment content is not visible to students until after the Available from date and time passes. However, rubrics are visible to students regardless of availability dates.

Can a teacher change the due date of an assignment?
